'tis the season (TO EAT EVERYTHING)

The holidays are just around the corner, and Publican Quality Meats is here to make your celebrations as delicious and stress-free as ever. Whether you're looking to ring in the new year with an classic standing rib roast, or keep a low profile with cheese, charcuterie and a bottle of wine, our friendly butchers have selected the highest quality offerings for any type of gathering.

MEATS

It wouldn't be a holiday party without a magnificent standing rib roast! Ours come from Slagel Family Farm in Fairbury, IL, and they make for the perfect centerpiece on any table. 

Here's the deal with our Ribeye: a full ribeye has six to eight bones, and we recommend ordering one bone for every two people (in other words, 8-10 oz. per person). If you're hosting a group of 15-18, a full ribeye is perfect. On the other side of the main-course category, our fantastic Strauss Grass Fed Beef Tenderloin average 5 lb. each at a recommended portion size of 6-8 oz. per person.

To make sure every bite of your roasts, ribeye and tenderloin are packed with flavor, we also have Steak Rub from Epic Spice, Au Jus, Horseradish Cream Sauce and Demi Glace.

In addition to beef, we’re offering Burger’s Smokehouse Spiral Cut City Ham from California, MO. The city ham is a wet-brined, bone-in ham, which comes with a glaze pack. Hams are 8 lbs on average. Fun fact: Burger’s is the oldest USDA-inspected smokehouse in the country, and first became certified in 1956.

Starters and sides

If you’re searching for the perfect kick-off to your holiday feast, look no further than our avec Dates with Piquillo Sauce. The same decadent morsels you know and love from our Randolph Street sister restaurant are available for purchase at PQM! Piquillo sauce sold separately, but heartily encouraged.

While our charcuterie program is always evolving, we will have our standard offerings and a few limited release items for the holidays.  Our coolers will be stocked with an assortment of our butcher curated meats and cheeses.  We recommend 3 or 5 selections of meats, and the same for cheese.  Let us know if there are any allergies and we can help get those selections ready for you to take home and platter yourself!

Our bread comes straight from Publican Quality Bread’s Head Baker, Greg Wade. We’ll have plenty of loaves and rolls, perfect for serving with alongside your meal. Please note that while bread is not available for pre-ordering, you may purchase it when you arrive to pick your order up.  Pro-Tip: Our bread, when wrapped in plastic wrap and frozen fresh heats up great in the oven a few days later(take the plastic wrap off first!)

PUBLICAN QUALITY GIFT BASKETS

We're offering an assortment of holiday gift baskets and PQM-branded crates. We've got chocolates, crackers, grains, jams, mustards, olive oils, pickled things, sauces, spice, vinegars, wine, beer--plenty of assorted items to stuff into a basket.

BUILD YOUR OWN CRATE/BASKEt

Come peruse our shelves and build your own crate or basket from scratch! We recommend 4-6 items for the crates (starting at $15) and 5 or more for the wicker baskets (starting at $10). We'd be more than happy to help you choose the perfect array of our offerings.
